Ingredients and spices that need to be Take to make Andhra Style Pesarattu and Veg Korma:

  1. 1 cup Green moong daal
  2. 1/2 cup Tuvar daal
  3. 1/4 cup Chana daal
  4. 1/2 cup Rice
  5. 1/2 cup Chopped mint leaves
  6. 1/2 cup Chopped coriander leaves
  7. 3 Chopped green chillies
  8. 1 tablespoon Chopped garlic
  9. 1 tsp Chopped ginger
  10. 1 tsp Turmeric powder
  11. 1 tsp Chilli powder (optional)
  12. 1 tsp Cumin powder
  13. 1/2 cup Fresh curd
  14. 1/2 tsp Baking soda(optional)
  15. as per taste Salt
  16. As required Water to mix batter

Instructions to make to make Andhra Style Pesarattu and Veg Korma

  1. Wash and soak all the lentils and rice separately for 6 hours. Then drain the water and grind to a paste. Use water only as needed to mke a thick batter.
  2. Also side by side, make a paste of mint, coriander, chillies, ginger, garlic and curd. Add this paste to the batter.
  3. Add all the spices and salt. Now heat a non-stick tawa and grease with little oil. Wipe with kitchen paper. Add soda and a little water to the batter and whisk well.
  4. Pour laddlefull of batter and make thick dosa in round shape. Pour 1 tsp oil around the sides, cover and cook for 1 minute. Turn when base is crispy and golden yellow.
  5. Cook the othe side same way. Remove to a plate. Make all the Pesarattu in similar way.
  6. Serve any time with your choice of chutney. I have prepared veg. Korma to go along. Enjoy.
  7. Veg Korma :
    First, stir fry finely chopped carrots, cabbage, peas and capsicum on high heat and keep aside. Then make a gravy of ginger, garlic, chillies, onions, tomatoes, and cook well. Add bay leaf, cinnamon, black cardamom and pepper corns for taste.
  8. When gravy is cooked well, add the vegetables, curd along with salt, chilli, turmeric, cumin and coriander powders. Mix well. Finish with garam masala and chopped coriander leaves. Serve with Pesarattu.
