Ingredients and spices that need to be Take to make Basic Layered Chicken Biryani:
- For chicken gravy:
- 1 chicken (karahi cut)
- 3/4 cup oil
- 2 onions sliced
- 1 tomato chopped
- 1 tsp ginger garlic paste
- 1/2 cup yogurt
- Salt to taste
- 2 tsp red chilli powder
- 1 tsp crushed coriander
- 1 tsp cumin
- 3-4 cloves
- 1 star anise
- 1-2 inch pieces cinnamon
- 2 black cardamoms
- 5-6 black peppercorns
- 2-3 tbsp freshly chopped coriander
- 2 tbsp freshly chopped mint
- 4-5 green chillies
- For rice:
- 3 1/2 glass rice (soaked for 1/2 hour)
- leaves few mint
- 1 bay leaf
- 2-3 cloves
- 3-4 black peppercorns
- 1 inch piece cinnamon
- For assembling:
- 1/2 cup fried onion
- 1/2 cup freshly chopped coriander
- 2 tomatoes sliced
- juice of 2 lemons
Instructions to make to make Basic Layered Chicken Biryani
- In a wok add oil, onion and stir fry till light golden, then add the chicken. Cook on medium high flame till the colour changes.
- Now add the tomatoes and all the spices. Mix well. Then add the yogurt and chilies. Cook on medium flame till the chicken is tender.
- On the hand, in a big pot, add 3/4 of pot with water and add the condiments for rice. Let it to boil. When the boil comes, drain the washed and soaked rice and add into it.
- Par boil the rice and strain. Keep aside. Then in the same pot, add a layer of chicken gravy then put the fried onion, chopped coriander and sliced tomatoes then layer the rice.. Repeat again.
- Squeeze juice of lemon onto it, then mix food color with 2-3 tbsp of water and pour in between the rice. Cover with lid and cook on lowest flame for at-least 12 mins.
- Open the lid and mix the rice from sides to the middle of the pot.
- Now serve with raita, salad and enjoy!
