  12. 1 tbsp fennel seeds
  13. 1/2 tbsp dry rose petals
  14. For cook rice:-
  15. 300 gm long grain basmati rice
  16. 2 liter water
  17. 1 tsp Shah jeera
  18. 1 bay leaf
  19. 2 inch cinnamon stick
  20. 3 green cardamom
  21. 4 cloves
  22. 1 star anise
  23. 1 tbsp salt
  24. 1/2 nutmeg
  25. 1 Mace
  26. 2 tbsp ghee
  27. For Marinating chicken:-
  28. 450 gm chicken
  29. 2 tbsp ginger garlic paste
  30. 2 tbsp yoghurt
  31. 1/4 tsp turmeric powder
  32. 1 tsp red chili powder
  33. 1 tbsp biryani masala powder
  34. 1/2 tbsp green chili paste
  35. 2 tbsp coriander leaves, chopped
  36. 2 tbsp mint leaves, chopped
  37. 1/4 cup fried onions
  38. 3 tbsp oil
  39. to taste Salt
  40. For Assembling and Layering the biryani:-
  41. 2 tbsp ghee
  42. 1 pinch saffron strands soaked in 1/4 cup warm milk
  43. 1/2 cup chopped coriander leaves
  44. 1/4 cup chopped mint leaves
  45. 1/2 cup fried onion
  46. 1 tsp biryani masala powder
  47. 1 tsp kewra water

Steps to make to make Hyderabadi Murgh Dum Biryani

  1. Prepare Biryani Masala:-
    Heat a pan add all ingredients of biryani masala. Dry roast it for few second. Let it cool down and grind it for make a fine powder.
  2. Soaking the Basmati rice:-
    Wash and soak the rice in water for 30 minutes. Drain off the water.
  3. Cooking rice for preparing Biryani:-
    Boil water in a vessel. Add salt and whole spices. When water comes to boil, add drained rice and cook until 80% done. Drain off the rice to a colander.
  4. Marinate the chicken :-
    Take a mixing bowl, mix chicken with all marinated ingredients. Mix all ingredients well and let the chicken marinate for about 2 hrs or overnight.
  5. Preparing chicken for Biryani:-
    Once chicken is marinated, heat a pot with oil add marinated chicken in it and cook for 5 minutes on medium to high flame. Cover it and cook the chicken on low flame until it cooked completely.
  6. Assembling and Layering the chicken dum biryani:-
    Place a tawa. Place a cooking pot on the tawa. Add little ghee at the base of the pot and grease the pot. Add the chicken, spread evenly. Add the strained rice, spread evenly. Top it with crushed fried onion, chopped coriander, mint leaves, saffron soaked milk, ghee, biryani masala powder.
  7. Cover tightly with an aluminium foil. Cover with a lid. Dum on medium flame for 10 -15 minutes. Once done switch off the flame and allow to rest at least 20 minutes.
  8. Remove the lid and mix the biryani gently using a large spoon to mix the chicken pieces and masala with the rice.
    Hyderabadi Murgh Dum Biryani is ready. Serve hot with raita and Salan
