  17. 2 cups yogurt, beaten
  18. 2 tsp red chillie powder
  19. 2 tsp coriander powder
  20. Juiced of 2 lemons
  21. 2 tbs salt or to taste
  22. 1 bay leaf
  23. 1 inch stick cinnamon
  24. 2 cardamom
  25. 2 cloves
  26. 1 tsp black cumin seeds
  27. 1 tsp white cumin seeds
  28. 4 tbsp coriander leaves finely chopped
  29. 4 tbsp mint leaves
  30. 1 pinc of yellow and red food cololr

  1. #Making_the_meatball:

  3. Throw in the yogurt and stir well to prevent the yogurt from curdling. Toss in the prepared meatballs (koftas) at this point and give it a stir.
    Cook on low heat till oil starts leaving the sides.
    Mix in the lemon juice, coriander leaves/cilantro and mint leaves. Switch off the flame and set aside this gravy while you get the rice ready.
  4. Boil sufficient water in a large vessel to cook the rice. Add salt and a tbsp of oil to the water. The oil helps to keep the rice separate. Add rice to the boiling water.
    Cook rice to 70% done.

    Add rice to the gravy. Do not mix. Add a tsp of ghee on top of the rice with sprinkle some food coloring.
    Cover with foil and close the lid. The foil does not let the steam escape.
  5. Place on a iron skillet (tawa) and cook on low heat for 15 minutes. If you do not have a iron skillet (tawa), cook on low flame for 10 minutes.
    Let it rest for another 15 to 30 minutes before opening the lid.
    Finally open the lid, mix gently and serve hot with raita n fresh salad.
