  14. 2 Cinnamon stick
  15. 2 Green Cardamom
  16. 1 cup Chopped onions
  17. 4 Green chillies
  18. 1/2 cup Coriander leaves
  19. 1/2 cup Mint leaves
  20. 2 tbsps Lemon juice
  21. as needed Oil for deep fry
  22. 2 tbsp Ghee
  23. As needed Food colour (green, orange, yellow)

Steps to make to make Prawns dum briyani

  1. Prawns clean and wash in it mix red chilli powder, salt, turmeric and ginger garlic paste well (these ingredients mix half quantities only). Deep fry in oil till slightly turn in brown colour in little high flame (if u want to cook from inside till brown colour it will becomes hard)
  2. Deep fry onion slices in same oil till it turns in golden brown
  3. Marinate prawns with all spicy ingredients gor 1hr. Expect cloves, cinnamon, cardamom, shajeera, bay leaves, half brown onions, half coriander leaves, mint leaves,
  4. Once r twice wash basmati rice and soak for 20mins.
  5. Keep a wide pan on stove. Heat 1tbsps ghee fry shajeera, cloves, cinnamon stick, green cardamoms, bay leaves till nice aroma comes out. Next add basmati rice and 2cups water. Cook half boiled rice(pour 4 cups water after rice cooked half boiled strain excess water)
  6. Keep a marinate prawns in heavy bottom pan on stove. Add 2nd layer with half cooked basmati rice. In 3rd layer cover with brown onions, coriander leaves, mint leaves, food colour and last 1tbsp ghee cover lid without gap leaveit for 5mins in high flame
  7. Keep in low flame for 30mins
  8. Now prawns dum is ready to serve
  9. Serve briyani in serving plates with cucumber, onions (optional), raita
