- 2 Table spoon Curd
- 2 big onions
- 1 sweet corn
- 2 medium size potatoes
- 1 capsicum
- 3 chillies
- 4-5 curry leaves
- 1 1/2 cup coriander leaves
- 1 Table spoon chilli flakes
- 1/2 tea spoon cooking salt
- 1/2 tea spoon mustard seeds
- 1 Table spoon Oil
- as per taste Salt
Instructions to make to make Veg Rice Uttapam
- First of all will take 3 cups/ small bowls of rice and soak it for 4 to 5 hours.
- Will stir the water. Will pour it in Mixture jar.
- Will take half of the soaked rice and will add 1 Table spoon of curd. And will grind it. Same will do with remaining half portion of rice.
- Now, Will boil potatoes and sweetcorn. And will chop all the vegetables. Such as capsicum, Chillies, onions and coriander leaves. Will separate corn seeds and will grate boiled potatoes.
- Then, Will add salt and all the chopped vegetables to the rice batter.
- Then, Will add chilli flakes, cooking salt, oil and mustard seeds in the batter.
- Will make a thick mixture. And will pre heat non-stick griddle. And then will spread the batter on it. Will make small -small uttapam on it. Will bake it for 2 to 3 minutes on both the sides.
